De Martino's organic wines are a true reflection of the ability of Chile's terrior to produce high-quality wines, while maintaining complete respect for the environment. A percentage of the proceeds from every bottle sold goes to CODEFF, a local charity that preserves and conserves Chile's beautiful countryside.
Vineyards:
Although the De Martino family has been organically farming their 300 hectares of vineyards in the Maipo Valley for well over a decade, this is only one of two certified organic wines. Produced from 16 hectares of the Santa Inés vineyard, which is certified organic by the German organization BCS Öko-Garantie GmbH. Planted at an elevation of 350 meters above sea level in soil of alluvial origin, the trellis training method was implemented achieving a density of 5000 vines/hectare.

Winemaking:
The grapes were harvested by hand in mid-February. Upon arrival at the winery, the bunches are carefully selected by use of a sorting table. A 4-hour cold-soak at 4°C in stainless steel stanks occurred prior to crush. Fermentation followed over a period of 15-18 days at 10-14°C in stainless steel tanks. The wine was filtered and refrigerated prior to bottling.
Tasting Notes:
On the nose, this Sauvignon Blanc possesses notes of peaches, citrus fruits, and green apples. It is vibrant and crisp on the palate, with a pleasant, lingering natural acidity.
Food Pairings:
An excellent accompaniment to raw shellfish, such as oysters, seafood prepared with light sauces, fresh salads, and soft cheeses.
